Fresh mozzarella is prized for its creamy texture and delicate flavor, and this class will teach you how to make it in your own kitchen! The class will be taught by Sophie Slesinger, one of our fromagers and a nationally known cheese expert. Sophie is currently based in Pittsburgh, PA, where she is pursuing a dual degree in the Food Studies program at Chatham University. Prior to graduate school, Sophie worked as a fromager for the Michelin-starred Blue Duck Tavern in Washington, D.C., and as the program director of Saxelby Cheesemongers in New York, linking over 100 restaurants with fine farmstead cheese.
A special highlight of our mozzarella class is the source of the curd. It is from Caputo Brothers Creamery located in York, PA. Sophie says they are “amazing” and produce the best curd in the country because, unlike most curds, it is naturally fermented. Join us for mozzarella making and tasting, and take home some Caputo Brothers curd to make some more!
Classes will be held in the “cheese cave” on the lower level of Alphabet City.
